A southern favorite...

White Texas Cake

2 2/3 cups Andrea’s Gluten Free Flour Blend
2 cups sugar
1 tsp cinnamon
1 cup water
½ cup butter
½ cup canola oil
2 eggs, slightly beaten
2 tsp vanilla
1 ½ tsp baking soda
2/3 cup buttermilk

Icing:

½ cup butter
8 oz cream cheese
1 tsp vanilla
1# powdered sugar
Chopped pecans—optional

Preheat oven to 325 degrees. Cream sugar, butter, oil and eggs. Add water, cinnamon, vanilla and baking soda. Add flour and buttermilk. Pour into greased jelly roll pan and bake 45-55 minutes. Whip ingredients for icing. Frost cake when cooled.
