Coconut Chocolate Chippers
¾ cup granulated sugar
½ cup Andrea's Gluten-Free Flour Blend
1 Tbsp. Butter, melted and cooled
2 cups shredded coconut
1 package (6 oz.) semisweet chocolate morsels
1 ½ tsps grated orange peel
1 tsp. vanilla
In large mixing bowl with an electric mixer on low speed, beat eggs until foamy.
Gradually add sugar; continue beating until mixture is quite thick and lemon-colored.
Fold in flour and melted butter.
Stir in coconut, chocolate morsels, orange peel and vanilla.
Drop mixture by teaspoonfuls onto greased and lightly floured baking sheets (or use parchment paper on baking sheets). Bake in a preheated 325-degree oven for 13-15minutes, or until firm to the touch and lightly golden.
Let cool slightly on baking sheets, then transfer cookies to wire rack to cool completely.
