Preheat oven to 350°
Spray 8x8 baking dish with non-stick cooking spray.
1/2 cup vegetable or canola oil
1/4 cup natural applesauce
1 cup sugar
1/2 tsp vanilla
Stir above ingredients together in a bowl until well mixed.
1-1/2 cups Andrea's Gluten Free Flour Blend
1/2 tsp salt
1/2 tsp baking soda
1/2 to 3/4 tsp cinnamon
Stir these well completely, blending dry ingredients into the wet. Mixture will be very thick.
2-3 medium apples, peeled and chopped.
You may grate the apples if desired. I add lots of apples and prefer the combination of Granny Smith and Jonathan apples. Stir apples into cake batter until incorporated thoroughly.
Spread cake mixture into pan and bake for 32-40 minutes, until a toothpick comes out clean. Cool completely before cutting and serving. You can leave the cake plain, dust with powdered sugar, or lightly glaze once cake is cool.
